Great Non-Stick Performance August 24, 2010 NE2WA My wife makes great muffins and mini cakes that she likes to fancy up with interesting pans. This one is her favorite. The cathedral style mini bundts look great. Best of all, this pan outperforms all the others she has when it comes to getting the cakes or muffins out. This one delivers on the no-stick pledge.
Really nice single serving cakes May 4, 2010 jk (Marietta GA) This pan is awesome for making single serving desserts or coffee cakes. They are a little big, but no one complains.
I just sprayed the pan with Pam w/ flour and they released flawlessly. Company thinks you did something extra special and really you didn't. Keep the secret!
Nordic Ware Platinum Garland Bundt Pan February 19, 2010 Amy Y. (FREMONT, CA USA) Nordic Ware's Platinum Collection really deserves the platinum rating. These are heavy-duty cast aluminum pans.
This pan in particular turns out lovely mini bundt cakes. I use them for quick breads like chocolate banana and zucchini raisin bread. This pan has three different styles of bundts in miniature: Cathedral, Fleur de Lis and Bavaria.
Each cavity has a 1 cup capacity. I have had good results by filling with 1/2 C of batter. As it bakes, the batter will rise and fill the remaining space in the cavity. If you overfill, the bottoms will rise up and be rounded so they won't sit level(though you can also use a cake leveler to trim the bottoms flat to the pan before turning the cakes out- they sell these but I use a very fine gauge stainless steel wire which has each end wrapped around a 3-inch wooden dowel).
For quick breads, I use Cook's Illustrated's recipes- the yogurt in them makes the cakes very moist. I get about 8-9 of these mini bundts out of a recipe that would normally make one regular loaf. I usually double or triple the recipe if I am making these for an event. If they are just for home consumption, often I will do one pans worth of individual bundts and then a pan of mini muffins or a few jumbo muffins.
In terms of baking time, I start checking for doneness at about half the time called for in the recipe. In my oven, they usually take about 20-25 minutes to bake up. These heavy duty pans will leave a nice finish on whatever you bake in them. I like that the outside gets a tiny bit crispy without being hard and dry- I feel like it seals in the air and moisture which is why everyone I make these for loves them.
I have also used pound cake, shortcake, and cupcake recipes in these. You have to watch the time because these do bake differently than just cupcakes or a whole loaf. As far as getting the bundts out of the pan- never a problem for me and all I do is put the pan in my sink and thoroughly spray the cavities with Pam or a similar cooking spray. I do not grease and flour- just use the spray and have NEVER had any stick. Do make sure you wash thoroughly in between uses. I soak my pans for a bit and then use a soft brush to get into the nooks and crannies- they wash up very easily that way.
A final note- shortcake is fabulous in these pans and then when they are done, fill the center of the bundt with fruit, drizzle sauce over the top and garnish with whipped cream- absolutely fabulous strawberry shortcake!
I get tons of compliments on these and the kids love them because they are so elegant and also BIG!

I have 2 different sets of these and love them for muffins. Make sure you use the spray flour pan coating and cool them for 10 minutes before removing, sometimes I have to shake out a couple that do not come out on there own. I was told by an experienced baker not to wash my baking pans with soap if I did not have too. I find over the years this was good advice and have not had any problems. If something sticks to the pan just rinse out with warm water and dry before putting away, and you shold be a happy baker!

This seems to be a quality item. (It was a Christmas gift!) However, the day after I purchased it, I found it at WalMart for $11 cheaper! I came home and emailed Amazon, for I thought that was too much difference! I received a "stock" answer that basically said they did not price match! So, it is a fine product, but do your own price comparison before buying!
